Heat the oil in a large saucepan and sauté the onion over a gentle heat for 2 minutes. Add the garlic, celery and peppers and continue cooking for 3 - 4 minutes.
Stir in the brown rice and cook, while continuously stirring, for a further 2 minutes until the grains become translucent.
Add the vegetable stock, bring to the boil then simmer for 20 - 25 minutes until the liquid has been absorbed and the rice is cooked.
Stir in the You Are What You Eat Fruitabulous fruit and nut mix, and the parsley, then season to taste with the salt and freshly ground black pepper.
