Stir-fried chicken and vegetables with noodles, nuts and fruit
Makes 4 servings
- 175 g (6oz) rice noodles
- 2-tablespoons (30 ml) olive oil
- 225g (8 oz) boneless chicken, skinned and cut into thin strips
- 1 onion, sliced
- 1 teaspoon (5 ml) grated fresh ginger
- 2 garlic cloves, crushed
- 175 g (6oz) broccoli florets
- 175 g (6 oz) thin green beans, trimmed
- 1 courgette, sliced
- 125 g (4 oz) beansprouts
- 1-tablespoon (15 ml) water
- 1-tablespoon (15 ml) light soy sauce
- 100 g packet You Are What You Eat Nothing But Fruit, Nuts and Seeds
Pour boiling water over the noodles and leave to soak for 6 minutes. Drain then rinse in cold water and drain again.
Heat the oil in a non-stick wok or large frying pan. Add the chicken strips, onion, ginger and garlic and stir-fry for 2 minutes.
Add the broccoli, green beans and courgette and stir-fry for a further 2 - 3 minutes.
Add the drained noodles, bean sprouts, water and soy sauce, and continue stir-frying for a further minute.
Stir in the You Are What You Eat nothing but fruit, nuts and seeds mix. Transfer to a serving dish.
